So, what is cocos nucifera (coconut) oil?

Cocos nucifera (coconut) oil is an edible plant fat derived from the coconut palm, with Cocos nucifera being the botanical Latin name for the plant. It is produced by harvesting mature coconuts and extracting the oil from the kernel or meat. Producers extract the fat through either wet milling of fresh coconut flesh or dry expeller pressing of dried coconut meat, commonly known as copra. Refined varieties may subsequently undergo standard bleaching, filtering, and deodorizing processes to create a neutral flavor and higher smoke point. It appears in a wide range of food products, including non-dairy cheeses, plant-based spreads, chocolate coatings, baked goods, and frying fats.

This ingredient is classified as vegan because it is entirely of plant origin. The harvesting, extraction, and refining stages rely strictly on botanical raw materials and mechanical or chemical processing methods, without the involvement of animal tissues, byproducts, or animal-derived processing aids.
