So, what is de rocou?
De rocou, also known as achiote, is a natural food coloring and flavoring ingredient derived from the seeds of the achiote tree. The seeds are dried, ground, and then infused in oil or water to create a vibrant red-orange liquid, which is commonly used in Latin American and Caribbean cuisine to add color and depth to dishes such as rice, stews, and sauces. In addition to its culinary uses, de rocou has also been used traditionally for medicinal purposes, particularly for its anti-inflammatory and antioxidant properties. Its distinct earthy, slightly sweet and slightly bitter flavor profile makes it a unique addition to any recipe.
