So, what is dierlijk stremsel?
Dierlijk stremsel, also known as animal rennet, is an ingredient commonly used in cheese-making. It is obtained from the stomach lining of young ruminants, such as calves or lambs, and contains enzymes that help coagulate milk proteins to form curd. While some cheese-makers have switched to using plant-based alternatives, traditionalists believe that dierlijk stremsel provides a unique flavor profile and texture that cannot be replicated by synthetic substitutes. However, its use may not be suitable for vegetarians and vegans, as it involves the slaughter of animals.
