Dimethyl dicarbonate (DMDC) is a food preservative and flavoring agent commonly used in the production of beverages, such as wine, beer, and fruit juices. It is a colorless and odorless liquid that contains a high concentration of carbon dioxide. DMDC is added to drinks at low levels, typically less than 200 mg/L, to prevent microbial growth and extend their shelf life. While there are concerns about the safety of DMDC due to its potential toxicity, it has been approved for use in many countries and is deemed safe when used within regulatory limits.
