So, what is e161?

E161 is the European additive code for xanthophylls, a family of natural and synthetic carotenoid food colorings that provide yellow, orange, and red hues. These pigments occur naturally in green leaves, algae, and yellow flowers such as marigolds, but they can also be produced through chemical synthesis. Food manufacturers use E161 and its specific sub-types, such as lutein and canthaxanthin, to impart color to confectionery, baked goods, dessert mixes, sauces, and flavored drinks.

This ingredient is vegan because its production relies exclusively on plant, microbial, or synthetic origins. Commercial xanthophylls are typically extracted from dried marigold flower petals, cultured from microalgae, or synthesized from petrochemical precursors in a laboratory. Since no animal tissues or animal-derived substances are used as raw materials or processing aids in the production of E161, foods listing this coloring are suitable for individuals following a vegan diet.
