It is produced by neutralizing ascorbic acid with a sodium compound such as sodium bicarbonate or sodium hydroxide. The ascorbic acid used in this process is commercially manufactured through the microbial fermentation of plant-derived glucose, which is typically sourced from corn or wheat starch.

This ingredient functions primarily as an antioxidant, color stabilizer, and preservative. Food manufacturers use it to prevent discoloration and rancidity, and it frequently appears on labels for plant-based meat substitutes, canned vegetables, cured meats, bakery items, breakfast cereals, and fruit preparations.

E301 is vegan because its industrial production relies exclusively on plant starches, bacterial fermentation, and mineral or synthetic chemical bases.
