E332i is the food additive code for monopotassium citrate, a potassium salt of citric acid. It is manufactured by partially neutralizing citric acid with a mineral-derived potassium source, such as potassium hydroxide or potassium carbonate. The citric acid used in this reaction is industrially produced through microbial fermentation, usually employing the fungus Aspergillus niger to ferment plant-derived carbohydrate substrates like molasses, corn starch, or sugar beet syrup.
Manufacturers use monopotassium citrate primarily as an acidity regulator, buffering agent, and stabilizer. It frequently appears in packaged food and beverage products, including carbonated soft drinks, sports beverages, jams, jellies, confectionery, and dietary supplements.
E332i is vegan.. Its synthesis relies entirely on mineral compounds and microbial fermentation of plant sugars. No animal tissues, animal-derived processing aids, or animal by-products are involved in its commercial production.
