So, what is e352?
E352 is the European food additive code for calcium malates, which include calcium malate and calcium hydrogen malate. These compounds are synthetic salts produced by neutralizing malic acid with calcium hydroxide or calcium carbonate. The malic acid used in this process is commercially produced through chemical synthesis or microbial fermentation, while the calcium bases are obtained from mined mineral sources such as limestone. Manufacturers use E352 primarily as an acidity regulator, buffering agent, and firming agent in foods such as canned fruits, processed vegetables, jams, jellies, confectionery, and soft drinks.
This additive receives a vegan verdict because it is derived exclusively from mineral and synthetic or microbial materials. Neither the synthesis of malic acid nor the extraction of mineral calcium involves animal tissues or animal-derived processing aids. Because no animal sources are utilized at any stage of manufacturing, E352 is consistently suitable for a vegan diet.
