So, what is e621?

E621, also known as monosodium glutamate (MSG), is a flavor enhancer commonly used in processed foods. It is a white, crystalline powder with a distinctive savory taste known as umami. MSG is made from the fermentation of sugar beets, corn, or molasses and is often added to soups, broths, sauces, and snack foods to improve flavor and aroma. Despite concerns about its safety and potential side effects, MSG is generally recognized as safe by the FDA and is widely used in the food industry. However, some people may experience adverse reactions to MSG, such as headaches, flushing, and sweating, in a condition called Chinese Restaurant Syndrome.
