Eelgrass, also known as Zostera marina, is a marine flowering plant that grows in shallow coastal waters. It is commonly found in estuaries, bays, and salt marshes, and can be recognized by its long, ribbon-like leaves. Eelgrass is an important part of many marine ecosystems, providing food and shelter for a variety of animals, including fish, crabs, and waterfowl. It is also used by humans in a variety of ways, including as a food source and as a natural fertilizer. Eelgrass has a subtle, briny flavor and a crisp, slightly crunchy texture, making it a popular ingredient in salads and seafood dishes.
