So, what is emulsionante lecitina?
Emulsifier lecithin is a natural ingredient commonly used in the food industry to stabilize mixtures of oil and water. Extracted from sources like soybeans, sunflowers, or eggs, this emulsifier helps create smooth textures in foods like chocolate, salad dressings, and mayonnaise. Lecithin works by reducing the surface tension between the two immiscible substances, allowing them to mix and form a stable emulsion. It is also used in baked goods to improve dough elasticity and shelf life. Apart from its culinary applications, lecithin is also used in the cosmetic and pharmaceutical industries as a surfactant and nutrient.
