So, what is et gomme xanthane?
Et gomme xanthane, or xanthan gum, is a food ingredient commonly used as a thickening agent and stabilizer in a wide range of food products. It is made through the fermentation of sugars by the bacterium Xanthomonas campestris, which creates a viscous substance that is then dried and powdered. Xanthan gum is soluble in both hot and cold water and is known for its ability to create a smooth texture in foods. It is often used in gluten-free baking to replace the binding properties of gluten, and can also be found in salad dressings, sauces, and ice cream.
