Sodium nitrite is a type of salt that is commonly used as a preservative in processed meats like bacon, ham, and hot dogs. It helps to extend the shelf life of these products by inhibiting the growth of bacteria, while also enhancing their color and flavor. However, some studies suggest that consuming too much sodium nitrite may be linked to an increased risk of certain types of cancer. As a result, many food manufacturers have begun using alternative preservatives or reducing the amount of sodium nitrite used in their products.
