So, what is extrait de rocou?
Extrait de rocou is a natural food colorant derived from the seeds of the annatto tree, which is native to tropical regions of South America. The seeds are processed to extract a bright red-orange pigment that can be used to add color to a variety of foods, including cheese, butter, and baked goods.
