Extrait de rocou is a natural food colorant derived from the seeds of the annatto tree, which is native to tropical regions of South America. The seeds are processed to extract a bright red-orange pigment that can be used to add color to a variety of foods, including cheese, butter, and baked goods. In addition to its vibrant hue, rocou extract is valued for its antioxidant properties and its ability to enhance the flavor of certain dishes.
