Ferments lactiques de yaourt, also known as yogurt cultures, are live bacteria strains used to ferment milk and produce yogurt. These cultures, typically Lactobacillus bulgaricus and Streptococcus thermophilus, consume the lactose in the milk and produce lactic acid, which thickens and acidifies the milk, creating the characteristic texture and tangy flavor of yogurt. Ferments lactiques de yaourt have been used for centuries in traditional yogurt-making processes and are now widely available in commercial yogurt production. They are also considered a probiotic, as they can provide health benefits by promoting the growth of beneficial gut bacteria.
