So, what is fumet?
Fumet is a flavorful ingredient commonly used in French cuisine, particularly in sauces and soups. It is made by simmering fish or shellfish bones, vegetables, herbs, and spices in water or white wine until the liquid is reduced to a concentrated broth. The resulting fumet is rich in umami, a savory flavor that adds depth and complexity to dishes. Fumet is an excellent base for seafood bisques, chowders, and stews, and can also be used as a flavorful cooking liquid for seafood dishes such as poached fish or mussels.
