This process involves force-feeding the birds to stimulate the liver's growth, which has caused controversy among animal welfare groups. Despite this, many gourmets consider goose liver to be a luxurious ingredient that elevates any dish it's added to. It can be enjoyed pan-seared, poached, or in pâté form, and pairs well with sweet, acidic, or spicy flavors.
