It's made from pasteurized cow's milk and has a complex, tangy taste that's both creamy and sharp. The cheese is speckled with blue veins, which are created by introducing Penicillium roqueforti spores into the curd during production. Blue Stilton is traditionally aged for three to four months, during which time it develops a rich, buttery flavor and crumbly texture. It's often enjoyed on a cheeseboard or crumbled over salads and pasta dishes.
