So, what is grasso del latte?
Grasso del latte, also known as milk fat or butterfat, is the fatty component of whole milk that provides it with its characteristic richness and flavor. It is a natural emulsion of water, fat, and protein that can be easily separated from the rest of the milk through centrifugation. With a melting point of around 30°C, milk fat is often used in the production of dairy products like cheese, yogurt, and ice cream. Its unique composition makes it important for creating smooth and creamy textures, and it is often added to baked goods and other recipes to enhance their flavor and texture.
