Xanthan gum, or "гума ксантан" in Bulgarian, is a highly versatile food ingredient that is commonly used as a thickening agent, stabilizer and emulsifier. It is a natural polysaccharide produced from the bacteria Xanthomonas campestris, which is fermented with sugars to create a viscous, gel-like substance. This ingredient has several advantages over other thickening agents, including its ability to form a stable gel at low concentrations, its excellent compatibility with a wide range of other ingredients, and its resistance to degradation by heat, acid, and enzymes. As such, "гума ксантан" can be found in a variety of foods ranging from salad dressings and sauces to baked goods and desserts.
