So, what is invertáz?
Invertase or invertáz is a natural enzyme found in honey, yeast, and many fruits. This protein-based ingredient is commonly used in the food industry to hydrolyze sucrose into its component parts of glucose and fructose, a process known as inversion. Invertase is particularly useful in confectionery for creating fondant, caramel, and other sweet treats. It is also widely used in the production of alcoholic beverages and pharmaceuticals. As an alternative sweetener, invertase has been shown to have a low glycemic index and may be suitable for individuals with diabetes.
