So, what is judía roja?
Judía roja, also known as red kidney bean, is a nutrient-dense legume that is commonly used in Latin American, Caribbean, and North American cuisine. These deep red beans have a firm texture and a slightly sweet flavor that makes them perfect for stews, soups, salads, and chili recipes. They are an excellent source of plant-based protein, fiber, iron, and potassium, making them a popular ingredient for vegetarians and vegans. However, it's important to note that raw or undercooked judía roja can be toxic due to the presence of lectin, a harmful protein, so they must be cooked thoroughly before consuming.
