Karboxymethylcelulosa, also known as carboxymethylcellulose or CMC, is a versatile food ingredient commonly used as a thickener, stabilizer and emulsifier in a wide range of processed foods. It is derived from cellulose, the main structural component of plants, through a chemical process that adds carboxymethyl groups to its polymer chains. CMC has the ability to absorb and retain large amounts of water, forming a gel-like texture that improves the texture, mouthfeel and shelf life of food products. It is commonly found in baked goods, dairy products, sauces, dressings, and beverages.
