It is a grain product that is made by sprouting and drying cereal grains, such as barley, wheat, or rye, and then crushing them into a powder. This process activates enzymes that break down complex carbohydrates into simpler sugars, which can be used by yeast or bacteria to produce alcohol, carbon dioxide, or lactic acid. In baking, malt is often used as a natural sweetener, flavor enhancer, and dough conditioner, as it can improve the texture, color, and aroma of bread, bagels, pretzels, and other baked goods.
