Mono- and diglycerides of fatty acids, also known as E471, are food emulsifiers derived from plant or animal sources. They are commonly used in the food industry to stabilize and enhance the texture of processed foods such as baked goods, margarine, and ice cream. These emulsifiers consist of glycerol molecules that are esterified with fatty acids, and their unique chemical structure enables them to act as a bridge between water and oil-based ingredients. As a result, they can improve the shelf life and overall quality of food products by preventing separation, reducing stickiness, and enhancing mouthfeel.
