Monosodium glutamate (MSG) is a white crystalline powder that is commonly used as a flavor enhancer in various cuisines, including Chinese, Japanese, and Korean. It is a sodium salt of glutamic acid, an amino acid that occurs naturally in some foods. MSG has a savory, umami taste that can intensify the flavor of foods without adding any significant taste of its own. It is often added to soups, sauces, snacks, and processed meats to enhance their taste. Despite some controversy, MSG is considered safe for most people to consume in moderate amounts.
