So, what is nitrite sodium?
Sodium nitrite is a food preservative and coloring agent that is commonly used in the processing of cured meats like bacon, ham, and sausages. It is a salt that has a slightly salty and bitter taste and is commonly found in small amounts in many vegetables. Sodium nitrite helps to prevent the growth of harmful bacteria and fungi in cured meats, prolonging their shelf life and ensuring their safety for consumption. However, excessive consumption of foods containing sodium nitrite has been linked to health issues such as cancer, so it should be consumed in moderation.
