So, what is œuf de lompe?
Œuf de lompe is a small, black caviar-like ingredient commonly used in Scandinavian cuisine. It comes from the roe of the smelt fish, which is then delicately cured with salt and sometimes colored to deepen its striking black hue. With a crunchy texture and briny flavor, œuf de lompe adds a burst of umami to any dish it is added to. It is often used to garnish dishes such as deviled eggs, potato salads, and canapés, and pairs well with sour cream, crème fraîche, and dill.
