So, what is œufs de lompe?
Œufs de lompe, also known as lumpfish roe, are small, vibrant, and flavorful pearls that add a burst of color and taste to any dish. These tiny, glossy, orange or black eggs are derived from the female lumpfish, a small, cold-water fish found in the North Atlantic and North Pacific oceans. Œufs de lompe are a popular ingredient in Scandinavian and French cuisine, often used as a garnish for canapés, hors d'oeuvres, and seafood dishes. They have a briny, slightly salty flavor with a delicate texture, making them an excellent addition to sushi, caviar, or smoked salmon dishes.
