So, what is pirofosfato tetrasódico?
Pirofosfato tetrasódico, also known as sodium pyrophosphate, is a food ingredient commonly used as a leavening agent in baked goods. It is a white, odorless powder with a slightly salty taste and is water-soluble. Pirofosfato tetrasódico works by releasing carbon dioxide gas when it comes into contact with an acid, such as cream of tartar or lemon juice, which causes dough or batter to rise. Additionally, it can be used as a sequestrant, helping to improve the texture of processed meats and canned fruits and vegetables. However, due to its high sodium content, it should be consumed in moderation.
