Pirofosfato dissódico, also known as disodium pyrophosphate, is a food additive commonly used in the food industry for its emulsifying and buffering properties. It is a white, odorless powder that is highly soluble in water. Pirofosfato dissódico is often added to processed meats, canned seafood, and bakery products to improve their texture, color, and shelf life. It is also used in some types of cheese to prevent the cheese from clumping together. Although pirofosfato dissódico is generally regarded as safe by regulatory authorities, some people may experience allergic reactions or other adverse effects after consuming it in large amounts.
