Polyphosphate E452 is the European food additive code for polyphosphates, a family of inorganic salts used primarily as emulsifiers, stabilizers, and moisture-binding agents. These compounds are produced commercially through the thermal condensation of orthophosphates, which originate from naturally occurring mineral phosphate rock treated with mineral acids and neutralized with alkali bases such as sodium or potassium.
Manufacturers add polyphosphate E452 to a broad range of food products, including processed plant-based meats, dairy alternatives, instant noodles, baked goods, and canned soups to retain moisture, prevent discoloration, and improve texture.
Polyphosphate E452 is vegan because it is derived completely from mineral and synthetic sources. Animal-derived ingredients, byproducts, and processing aids are not used during the extraction or chemical synthesis of these phosphate salts. Because no animal inputs are involved at any stage of production, this additive is entirely free of animal substances.
