So, what is potassium alginate?
Potassium alginate is a natural polysaccharide extracted from brown seaweed. It is commonly used as a thickener, stabilizer, and gelling agent in the food industry. Potassium alginate forms a gel when it comes into contact with calcium ions, making it an ideal ingredient for creating firm and stable food textures, such as those found in canned fruits and vegetables, dairy products, and salad dressings. Additionally, potassium alginate can be used to encapsulate flavors or nutrients in molecular gastronomy, resulting in unique culinary creations.
