So, what is potassium hydrogen tartrate?
Potassium hydrogen tartrate, also known as cream of tartar, is a fine white powder that is commonly used in baking as a leavening agent. It is a byproduct of the winemaking process, formed from the residue left on the inside of wine barrels after the fermentation of grapes. Potassium hydrogen tartrate is acidic in nature, and is often added to recipes to help stabilize and increase the volume of beaten egg whites. It is also used as a component in some laxatives and as a mild abrasive for cleaning purposes.
