So, what is potassium tartrate?
Potassium tartrate is a food ingredient commonly used in baking and cooking. Also known as cream of tartar, it is a white, odorless powder that is a byproduct of the wine-making process. Potassium tartrate acts as a stabilizing agent in whipped cream, meringue, and other egg-based dishes, preventing them from collapsing during preparation. It is also used in the production of baking powder, where it reacts with baking soda to create carbon dioxide gas and help baked goods rise. Potassium tartrate has a slightly acidic taste and is often used as a substitute for lemon juice or vinegar in recipes.
