Propionate de calcium, also known as calcium propionate, is a food additive commonly used to prevent the growth of mold and bacteria in baked goods. It is a white crystalline powder that is soluble in water and slightly soluble in alcohol. Calcium propionate is often added to bread, cakes, and other baked goods to extend their shelf life and prevent spoilage. It is considered safe for consumption by regulatory agencies such as the FDA and EFSA, and has no known adverse health effects at typical levels of use.
