So, what is protoxyde d'azote?
Protoxyde d'azote, also known as nitrous oxide, is a colorless and odorless gas commonly used as a food ingredient due to its ability to act as a whipping agent. This gas dissolves easily in fatty substances and creates a stable foam that gives a light and airy texture to desserts such as whipped cream, mousses, and soufflés. In addition to its culinary uses, protoxyde d'azote has several medical and industrial applications, including as a sedative in dentistry and as a propellant in aerosol cans. However, it is important to use protoxyde d'azote safely, as inhaling large amounts of the gas can be harmful to the body.
