Pyrophosphate de sodium is a white crystalline powder that is commonly used as a food additive. It belongs to the family of phosphates and has the chemical formula Na4P2O7. It is a multifunctional ingredient that serves as a buffering agent, emulsifier, and sequestrant in food products. Pyrophosphate de sodium can be found in a wide range of foods including processed meats, canned fruits, and baked goods. Its main function is to maintain the texture and consistency of these products while also extending their shelf life. However, excessive consumption of pyrophosphate de sodium may have adverse health effects, such as kidney damage and cardiovascular disease.
