So, what is quillaja?

Quillaja is a natural surfactant and emulsifying agent derived from the bark of the Chilean soapbark tree. It is commonly used as a food additive to create foaming agents or stabilize emulsions in various products such as beverages, sauces, dressings, and dairy products. Quillaja contains saponins that can lower cholesterol levels and boost immune function. Due to its natural origin, it is considered safe for consumption and is approved by various regulatory bodies worldwide. Its unique properties make it a popular ingredient in the food industry, especially in the production of plant-based foods.
