This distinct ingredient is made by smoking and curing beef, pork or even buffalo meat using an age-old technique unique to the region. The smoking process involves placing the raw meat on a bamboo rack over a wood fire, covering it with a banana leaf and then letting it smoke for several hours until it turns into a dry, chewy texture.
