So, what is savu?

Savu, also known as smoked meat, is a traditional delicacy hailing from the island of Sumba in Indonesia. This distinct ingredient is made by smoking and curing beef, pork or even buffalo meat using an age-old technique unique to the region. The smoking process involves placing the raw meat on a bamboo rack over a wood fire, covering it with a banana leaf and then letting it smoke for several hours until it turns into a dry, chewy texture. Savu adds a smoky and intense flavor to soups, stews, and other dishes and has become increasingly popular among food enthusiasts who appreciate authentic and exotic ingredients.
