Seigle broyé, also known as rye flour, is a finely ground flour made from the whole grain rye kernel. It has a distinct, earthy flavor with a slightly sweet and nutty taste. This flour is an excellent source of dietary fiber, essential minerals such as magnesium, phosphorus, and potassium, and vitamins B1 and B2. Seigle broyé is commonly used in baking, especially for bread making, due to its unique gluten structure that gives bread its dense, chewy texture.
