So, what is sirop de sucré inverti?
Sirop de sucré inverti, also known as inverted sugar syrup, is a thick, viscous liquid sweetener commonly used in baking, confectionery, and beverage production. It is made by heating a mixture of sucrose and water with an acidic compound, then neutralizing the acidity with an alkaline substance. This process breaks down the sucrose into its component sugars, glucose and fructose, resulting in a syrup that is sweeter and more soluble than regular sugar. Sirop de sucré inverti has a mild, honey-like flavor and is prized for its ability to retain moisture, enhance color, and improve texture in baked goods. It is also a popular ingredient in cocktails and soft drinks.
