So, what is sodium diphosphate?
Sodium diphosphate is a food additive commonly used as a buffering agent, emulsifier, and thickening agent in processed foods. Also known as disodium phosphate, it is a white crystalline powder with a slightly salty taste and is highly soluble in water. It is used to regulate acidity levels, improve texture and appearance, and extend shelf life in products like baked goods, cheese, and processed meats. While it is generally recognized as safe by the FDA, excessive consumption may lead to health problems like kidney damage, so it is important to use it in moderation.
