Tetrapotassium diphosphate is a food ingredient that belongs to the class of potassium phosphate salts. It's a white, odorless and water-soluble powder that serves as an emulsifier, stabilizer, and pH adjuster in food production. Tetrapotassium diphosphate is commonly used in processed meat products, canned vegetables, powdered beverages, bakery goods, and dairy products. Additionally, it's also used in the production of detergent, fertilizers, and water treatment chemicals due to its ability to sequester hard water ions. While considered safe for consumption by regulatory agencies, excessive intake may lead to adverse health effects such as hyperkalemia and hypertension.
