So, what is agujas?

Agujas, also known as needlefish, is a long, slender fish found in warm coastal waters of the Pacific and Indian Oceans. Its distinctive shape resembles a needle, with a pointed snout and elongated body that can grow up to three feet in length. The flesh of agujas is firm and white, with a mild flavor that pairs well with citrus and herbs. This versatile fish is often grilled or broiled, but can also be used in ceviche or sushi preparations. Due to its high levels of mercury, it is recommended to consume agujas in moderation.
