Aluminum laurates are a type of chemical compound that is used as an emulsifier and stabilizer in various food products. They are created by combining lauric acid, a fatty acid derived from coconut oil or palm kernel oil, with aluminum hydroxide. Aluminum laurates help prevent the separation of oil and water in processed foods, such as salad dressings, and improve the texture and mouthfeel of products like ice cream. While aluminum laurates are generally recognized as safe for consumption by the FDA, excessive consumption may lead to digestive issues or other health problems.
