So, what is cardos?
Cardos, also known as cardoon, is a unique ingredient that is often overlooked in modern cuisine. This thistle-like plant has a distinctively earthy, nutty flavor that pairs well with rich, creamy sauces and hearty meats. Its appearance is similar to celery, but with a slightly larger, more robust shape and a greyish-green hue. The stems and leaves of the cardos are edible, but must be blanched to remove any bitterness before being cooked. This versatile ingredient can be grilled, braised, sautéed, or even deep-fried to create delicious and memorable dishes that are sure to impress any food lover.
