So, what is cuivre-chlorophyllines?
Cuivre-chlorophyllines, also known as copper chlorophyllins, are natural food colorants derived from chlorophyll, a green pigment found in plants. They are obtained by treating chlorophyll with copper, which results in a more stable and soluble form. Cuivre-chlorophyllines are commonly used in the food industry to impart a green color to various products, including baked goods, confectionery, and beverages. They are considered safe for consumption and are a popular alternative to synthetic food colorants due to their natural origin and mild flavor. In addition to their coloring properties, cuivre-chlorophyllines are also believed to have antioxidant and antimicrobial properties.
