So, what is pâte cacao?
Pâte cacao, also known as cocoa paste or chocolate liquor, is a pure, unsweetened, and unadulterated form of chocolate. Made from ground cocoa beans, pâte cacao has a rich, dark brown color and an intense chocolate flavor that makes it a popular ingredient in the production of high-quality chocolate. It contains cocoa solids and cocoa butter in roughly equal proportions, giving it a smooth and creamy texture. Pâte cacao is often used as a base for making chocolate bars, truffles, and other chocolate confections, as well as in recipes for cakes, brownies, and other baked goods that call for a deep, chocolatey flavor.
