Curry leaves, also known as kadi patta in Hindi, are a fragrant herb commonly used in South Asian and Southeast Asian cuisine. They have a distinctively spicy, citrusy aroma and taste, with a slightly bitter undertone. Curry leaves are an important ingredient in many Indian curries, soups, and stews, as well as in dishes from Sri Lanka, Thailand, and Malaysia. They are often added to hot oil at the beginning of cooking to release their flavor or used fresh as a garnish. Along with their culinary uses, curry leaves are also believed to have medicinal properties and are used in traditional Ayurvedic medicine.
